Lovely--Cheese Cake

Recently, I made a lot of Cheese Cake.Both Tian and I like the taste very well.

Followed is my recipe of Cheese Cake

1. Soften 100g cream cheese and 30g butter in microwave oven. Add 100ml milk and 50g sugar.9
2.Whipping 3 egg white with vinegar (or lemon juice). Mix 10g Cornstarch during whipping.
3. Add 3 egg yolks and 20g cornstarch in step 1.
4. Gently mix egg whites into step 3.
5. Put all the mix into a tin, then put the tin into a larger one, which have some hot water inside.
6. Bake in oven at 150 centigrade for 30-35 mins.

Speculaasbrokken on Sinterklaas

Sinterklaas is a holiday tradition in the Netherlands. In the Netherlands, Saint Nicholas' Eve, (December 5) is the chief occasion for gift-giving. The evening is called pakjesavond ("presents' evening"). Traditionally, presents are carefully wrapped, and are therefore called surprises. Also, presents are traditionally accompanied by a poem from Saint Nicholas. Sinterklaas is the basis for the North American figure of Santa Claus. It was during the American War of Independence, that the inhabitants of New York City, a former Dutch colonial town (New Amsterdam) which had been swapped by the Dutch for other territories, reinvented their Sinterklaas tradition, as Saint Nicholas was a symbol of the city's non-English past. The name Santa Claus is derived from older Dutch Sinte Klaas. (All the above is from Wiki)

On 5th Dec, every family will eat this kind of cookies. I got a dutch recipe from Sinie. Thanks, sinie, tian and I like it very much. Even though I have baking many kinds of cookies, I never did a cookies with so many seasonings. It is quite tasted. I also make some different shapes with the rest of paste.

Recipe of Speculaasbrokken.

1. Mix 200g self-rising flour, with a little salt and 4 spoons of Speculaa seasoning and 100g brown suger.
2. Add 150g butter and 15ml milk together.
3. Knead the whole thing into a paste. Put it in fridge for 3 hours.
4. Role the paste when the thickness is about 1cm. Add some almond as you like.
5. Baking in the oven at 175 centigrade for 25-30 minutes.

Prepare of Speculaas seasoning,

4 spoons Cinnamon,half spoon white pepper, 1 spoon cloves powder, 1 spoon clove powder and litter piment, cardamon and ginger.

Green Tea Chiffon Cake

Green tea is quite famous in China. There is many health benefits, as mensioned. It is quite well for stomach and reduce the risk of cancer. Personlly speaking, I like the taste very well, especially, when it mixed with the red bean (what is also called Adzuki bean).

Therefore, I mix some green tea powders when I make a chiffon cake. You can find the recipe below.

recipe of Green Tea Chiffon Cake,
1. Whip 4 egg whites with hand mix.
2. Dissolve 4g Green Tea Powder into 60g milk, which has been heated already.
3. Mix 4 egg yolks with 60ml oil, 100g suger and the milk we has prepared before.
4. Sieve 120g cake flour in to step 3.
5. Gently mix all the egg whites into step 4.
6. Pour all the mix into a pan. Then put into 180 degree oven for 20 minutes.
7. After cooling down, cut them into small pieces and put some red beans and cream in the middle.

How to prepare the adzuki bean sauce,

1. Boiled the adzuki bean with water and sugar.
2. When every beans are becoming soft and there are only a little water in your pan, you can stop heating. Mix beans with honey and cool down.
I also make some Swiss Roll with the cream and adzuki bean as stuffings. It is great.

make it yourself, coconut bread

Everything is sleeping at night. When I was a child, I always said it is a great depth of stillness. Is it really that stillness? Not really. Leaves are beat outside, while the keyboard is beat inside. Moreover, my oven is still working at night, with a good smell of coconut.

Well, this is I make in midnight since it really take a lot of time to prepare for bread and wait for ferment. I like the taste of coconut very much.

I find the coconut in Chinese supermarket, and buy a bigger package. During the following days, I keep on thinking what can I do with it. I would like to bake bread with this coconut.Unfortunately these is no bread flour left. At last, I try this coconut bread with the normal flour.

Mianmian's recipe of coconut bread.

1.Heat 150ml milk. After coolig down a little bit,mix with one spoon of yeast and suger(40g).
2.Put flour (280g), one spoon of salt and one whipped egg together.
3.Knead all this things with the milk we have prepared.
4.Then crush up it with 40g butter.(Of course, you can do all the steps above with toaster)
5. It will then ferment and become two times bigger than before.
6. Then we prepare the stuffing. Mix the coconut, suger and butter equably.
7. Cut the paste into 10 pieces. Put stuffing into paste.
8. Make a beautiful shape which you prefer.
9. Put it in a warm place, for example, oven. Keep the temperature between 40 to 50 centigrade.
10. After 40 min, it will finish the second ferment. See the photo below.
11. Brush the egg to the surface.
12. 18min, at 180 degree centigrade in oven.
